This festive cake is a celebration in every bite — light, fluffy sponge layers filled with clouds of whipped cream and bursts of fruity freshness. Ingredients
For the cake:
200g all-purpose flour
1½ tsp baking powder
¼ tsp salt
120g unsalted butter, softened
150g granulated sugar
3 large eggs
1 tsp vanilla extract
120ml milk
For the filling and decoration:
300ml heavy whipping cream
2 tbsp powdered sugar
1 tsp vanilla extract
Fresh fruits (strawberries, kiwi, blueberries, etc.) for layering and topping
Preparation
Step 1: Preheat the oven to 170°C (340°F). Grease and line two 18cm (7-inch) round cake pans.
Step 2: In a bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 3: In a separate large bowl, cream the butter and sugar until light and fluffy.
Step 4: Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Step 5: Gradually add the flour mixture and milk alternately, beginning and ending with the flour. Mix until just combined.
Step 6: Divide the batter evenly between the pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
Step 7: Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Step 8: Layer the cake with whipped cream and sliced fruits. Cover the top with more cream and decorate with assorted fresh fruits.
