200g silken tofu (drained)
100g dark vegan chocolate (70% or higher), melted
2 tbsp maple syrup (or to taste)
1 tsp vanilla extract
Pinch of salt
Fresh berries or vegan whipped cream for topping (optional)
Preparation
Step 1: Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler), or in the microwave in short bursts. Let cool slightly.
Step 2: In a blender or food processor, combine the silken tofu, maple syrup, vanilla extract, and salt. Blend until smooth.
Step 3: Add the melted chocolate and blend again until fully incorporated and creamy.
Step 4: Taste and adjust sweetness with more maple syrup if needed.
Step 5: Spoon the mousse into serving glasses or bowls.
Step 6: Chill in the fridge for at least 1 hour to set.
Step 7: Top with fresh berries or vegan whipped cream before serving, if desired.
